*Disclaimer- I took these little Brussels down to a family gathering yesterday and here are some of the responses. On the way down my Jimmy confessed he didn't like them. My dad wouldn't even try them. My mom and Granny both loved them, and my brother Josh admitted to brussel sprouts being his least favorite food of all time BUT............he said they were tasty. So let's see where you fit in. Again for the record, me, Emma, and Seth love them, with Jed and Jake liking them. I'm throwing Jimmy's response away today. He's just trying to suck up:)
Fast forward quite a few years. A few gardens, and homes later and I thought maybe the lovely Avon air and ground would produce better brussel sprouts. The outcome was exactly the same. Aphids galore! They love brussel sprouts. So again the plants were ripped out, and now all my sprouts are purchased. Pre washed I may add.
This is another Pinterest recipe. It is wonderful! Tasty, delish, and I could just eat this for dinner. Actually I did the other night:) Maybe it's the bacon, or the avocado, but I think it's the lemon. Anyway, you've got to give it a try. Whether you're a brussel sprout lover or not, you'll like these. Thank you Pinterest. We tried another sprout recipe at Christmas as well that was divine. I'll have to post about that too, but I can't stop making the sprouts with the bacon. Soon though:) Enjoy! And let me know what you think!
Brussels Sprouts with Bacon, Avocado, and Lime
recipe adapted from In The Little Red House
1lb brussel sprouts
3 slices bacon
juice of 1/2 lemon
1 avocado, sliced
salt and pepper
While you are slicing your brussel sprouts, cook the bacon until crispy in a large skillet.
Add your shaved brussel sprouts. They're not really shaved. Just sliced and then they shred/
Cook for just a few minutes on medium heat, until brussels start to get tender.
Now squeeze the lemon over the top. Add salt and pepper to taste. Maybe a little more lemon. You decide. Now scoop in your avocado slices and mix them gently. I don't even care if they get hot or not. This is great at room temp as well. Serve immediately, and enjoy!
I'm super excited to try this recipe :) My kids LOVE brussel sprouts! They are a staple at our Thanksgiving and Christmas dinners.
